A Note From The Chef

The Summer schedule features a whole new crop of cooking classes designed for warm weather eating. You can view classes online at www.realcoolcookingschool.com or download a print version at the link in the right side-bar.

We recently added some new features to our website:

  • You can now register and pay for classes on-line using your credit card or your PayPal account.
  • The site now displays class open seat availability and allows you to wait list yourself on-line.
  • You can now view classes in a calendar view, list view or by category.

Our cooking classes continue to fill up, so register early to make sure you get your spot!

Recipe Of The Month

Spicy Mango Salsa
This salsa is great with tortilla chips or as a condiment with grilled fish or pork.

 Ingredients
2  Medium diced mangoes
1/2  Finely-diced, medium red onion
1/2  Finely-diced red bell pepper
1  Finely-diced Jalapeño chile
1  Fresh lime, juiced
Chopped fresh cilantro, to taste
Salt, to taste
Freshly-ground black pepper, to taste

Instructions
Combine the mango, onion, red bell pepper, jalapeno, cilantro and lime juice. Season to taste with salt and pepper. Cover and set aside.

May be prepared up to 1 day in advance, covered and refrigerated. Bring to room temperature before serving.

Yields about 2 cups of salsa.

Ingredients

Learn more about the ingredients that you use and how to substitute them when you don't have what the recipe calls for.

Limes
Substitutes: Lemon (lemons have a weaker flavor and are less acidic, so use a bit more to compensate) or Kalamansi.

Jalapeños
Substitutes: Cuaresmeno (very similar), Fresno Chile, Guero Chile, Malagueta (hotter), Serrano Pepper, Yellow Wax Chile Pepper or Fresh Cayenne Pepper.

Cilantro
Substitutes: Italian Parsley (if you like, add some Mint or Lemon Juice or a dash of Ground Coriander), equal parts Parsley and Mint, Parsley + dash Lemon juice, Papalo (similar flavor, but more pungent), Parsley + dash Ground Coriander, Celery leaves, Dill (especially in Thai seafood dishes) or Basil.
